I try and make a good breakfast every morning, either something with eggs or with oatmeal. Sometimes a smoothie, but Ben will NOT slow down and always ends up crying because either he has a brain freeze, or I’m telling him to slow down so he won’t get a brain freeze. Any who..
The kids are fine with just plain eggs, but sometimes I like a little something more than just eggs and toast, so I came up with this breakfast salad of sorts.
I’m not wise as to when things are in season, but my guess is that cheap = in season, so I feel confident in saying (without googling to double check) that avocados are in season right now. I’ve been buying (and eating) them like crazy lately!
This was my breakfast the other morning, it was like a breakfast salad. Eggs with goat milk cheddar, a chopped up avocado with a bit of celtic sea salt, and lime juice, and a chopped up Kumato tomato with a bit of salt as well. If you have an Aldi nearby, check to see if they have these brown Kumato tomatoes. I feel like tomatoes have been SUPER expensive lately, but I was able to get a pack of 5 of these tomatoes for $.89! They have a great, hearty flavor to them and could make for some fun when you go to feed your kids brown tomatoes. ;)
Full of good fats, full of other good for you stuff, and tasty. Sure, I like eating healthy, but even more so when doesn’t feel like I’m eating healthy.
