We’re big fans of “The Letter Factory” over here and usually around the time we hit “P! P-P-popcorn!” Lily goes RUNNING into the kitchen asking for popcorn. Since popcorn’s one of my favorites, I usually run in after her 😉
I loooove kettle corn, so I found a way to make it at home!
Take your stovetop popper, add around ⅓ of a cup of popcorn, a tablespoon of coconut oil, and a tablespoon of butter. Use more if you’d like, I’m a firm believer in good, healthy fats 😉
Put your lid on, let it warm up a bit, and add a ¼ cup of sugar for true kettle corn, ⅛ of a cup for regular popcorn with a bit of sweetness to it.
Pour into a bowl, sprinkle with celtic sea salt, let cool a bit, and serve!
Serve with Coca Cola de Mexico, comes in a cool glass bottle and has no high-fructose corn syrup! My grocery store carries it on sale for around $1 a bottle. It’s a nice treat. 🙂
