    Mini Pita Sliders

    The other day we started making hamburgers and realized we were out of buns. We could have gone without, but Doug had a great idea.

    We keep a bag of Trader Joe’s mini whole wheat pitas in the house since discovering that Lily will eat anything we put in a mini pita.

    Doug took ground chuck, added an egg, some panko bread crumbs (okay, so maybe I helped…), as well as some seasonings and mixed it all up and formed them into flat, wide patties. Out of a pound of meat we made 3 per each of us, 2 per Lily, 1 per Ben.

    Think flatter than normal, but the diameter of a normal bun, because these will shrink up

    Take your mini pitas and slice them.

    You will not have time to make fancy x marks, these cook fast!

    Add your cheese. We used Goat Milk Cheddar.

    Add your pitas to the grill for toasting for the last minute or two of grilling. I’ll say it again… these are tiny and they cook fast!

    Take a pita off, take a burger off, put the top on. Repeat times 8.

    We dressed each burger with a slice of tomato, onion, and a bit of spring salad greens. Served them with sweet potato gnocci, green beans, and a small salad. I wish we made more!

    I’m making a mental note,
    …must remember to forget buns more often! 😉
