- 2 medium sweet potatoes (about 1 pound), peeled
- 2 large shallots, chopped
- baby spinach, chopped
- 1 T butter, coconut oil, or olive oil
-Chop shallots (I used one large sweet onion and the Cuisinart since it was out)
-Add oil to pan and start cooking shallots/onions. Meanwhile, grate sweet potatoes in a food processor using the grating attachment.
-Once onions begin to brown, add sweet potatoes to pan and cook about 5-7 minutes. Once cooked, add spinach and cook until spinach is wilty.
I used butter instead of the olive oil and also added a touch of salt and the tiniest sprinkle of brown sugar.
This dish made enough for Lily, Doug and I, but were all disappointed that we couldn't go back for seconds. You might want to double or triple the recipe and cook it in a larger container like a dutch oven.
So yummy and SO simple, I made it and cleaned up the food processor in the time it took for Doug to grill the burgers.
I seriously can't wait to make it again. Hmm... I think I just decided what we're having tonight... 😉
