Avocado, Egg, and Tomato Breakfast Salad

I try and make a good breakfast every morning, either something with eggs or with oatmeal. The kids are fine with just plain eggs, but sometimes I like a little something more than just eggs and toast, so I came up with this breakfast salad in a bowl.

I’m not wise as to when things are in season, but my guess is that cheap = in season, so I feel confident in saying (without googling to double check) that avocados are in season right now. I’ve been buying (and eating) them like crazy lately!

This was my breakfast the other morning, it was like a breakfast salad. Eggs with goat milk cheddar, a chopped up avocado with a bit of celtic sea salt, and lime juice, and a chopped up brown Kumato tomato with a bit of salt as well. They have a great, hearty flavor to them and could make for some fun when you go to feed your kids brown tomatoes. 😉

Full of good fats, full of other good for you stuff, and tasty. Sure, I like eating healthy, but even more so when doesn’t feel like I’m eating healthy.

    Just curious (since you're a mom of 3 little ones), what you do with cards from their births, your baby shower, etc. Any creative ideas?
