I really like mojitos. There's just something about the tangy lime taste, the refreshing mint, and just a tiny bit of sweet. Coconut reminds me of all things tropical and therefore I like that too. Combine the two and you've got a mojito recipe that's out of this world.
This recipe is great even without the rum, because I'm guessing that's frowned upon when home with 5 kids at 2 in the afternoon.
We drink out of mason jars here at home and it took me until recently to realize - HEY! - a top screwed on a mason jar makes the perfect shaker.
If you have shorter mason jars, make half the recipe below. If you have a giant mason jar, I won't judge. If you're out of coconut rum, any other kind will work just as well.
You might not have the ingredients on hand, but once you try the drink, I'm guessing you'll make sure to keep them on hand. Limes, mint sprigs, stevia (or simple syrup), coconut rum, and sparkling mineral water. Simple enough, right? And if you've got an overgrown patch of mint, you'll likely want to be my new best friend after reading this.
If you're making it non-alcoholic and still want that coconut taste, add a teensy tiny splash of coconut extract with water in place of the rum.
Ingredients
- 1 Lime
- 1 Sprig Mint
- 3 oz Coconut Rum (if making non-alcoholic, substitute water)
- a few drops stevia (or a splash of simple syrup)
- ice
- sparkling water
Instructions
- Fill a quart sized mason jar with ice.
- Add coconut rum.
- Break mint leaves off of sprig and add to glass.
- Cut a lime in half, squeeze juice of lime into glass, add lime halves, and a few drops of stevia (to taste).
- Screw mason jar lid back on and SHAKE!
- Remove lid and top with mineral water.
- Add more stevia to taste.
Notes
If making this non-alcoholic, substitute water in place of rum for a regular mojito. If you want the coconut taste, add a teensy tiny splash of coconut extract.
Don't use stevia? Use a splash of simple syrup (equal parts water and sugar heated, then chilled).
It's the perfect after bedtime treat. And by bedtime I mean theirs not yours. 😉
