    Colorful Veggie Breakfast Scramble

    Here's a recipe we had last Saturday for breakfast! If you’re wondering, a scramble is, it is just a lazy man’s omelet.

    The veggie combo gives a great flavor, it’s super good for you, and so easy to make. Since some of the veggies need more time to cook than others, you add and cut them up one by one and don’t have to have to have everything done ahead of time. I used a half of each since there’s only three of us, but you can easily double up on veggies and/or eggs!

    Ingredients:

    -butter

    -red onion

    -red pepper

    -ham (deli meat, last night’s leftovers, or optional if you don’t do meat)

    -tomato (optional)

    -green onion (I’ll be honest, I just added this for color)

    -6 eggs

    -cheese you like (I used Lacey Baby Swiss from Trader Joe’s)

    -S&P

    Put your butter in your pan, fire it up, chop up half your onion and throw it in! Let cook while you chop up half your red pepper and throw it in! Let cook while you chop up your ham (do you see a pattern here?) and throw it in! Then do the same with your tomato, and then your green onion. Add butter as needed throughout sauteeing. When it looks nice and pretty, add your scrambled eggs. If you need to shred your cheese, do this now. Cook eggs and turn off heat, add your cheese and S&P, let it melt a bit, then stir in.

    Red, purple, pink, green, yellow, and white or orange (depending on your cheese) – it looks more colorful in person! Make some toast and enjoy! Yum!
