    Cucumber Dill Summer Salad

    This is a repost of one of my favorite FAVORITE recipes! Any person I know in real life who has tried it, was shortly thereafter ADDICTED! It’s so simple and easy, but has a lot of great flavor.
     
    This salad is the main reason I wanted to grow cucumbers and dill in our garden this year (well, also to eat them!) and I cannot WAIT for our tomatoes to start popping up so I can make this dish!

    cucumber, dill, sour cream, tomatoes (cherry or reg), salt and pepper to taste

    • Cut the cucumber into slices, then into quarters so that they are bite sized pieces.
    • Cut your tomatoes into bite sized pieces.
    • Chop fresh dill until fine. You can also use store-bought, in-the-shaker dill. If you do decide to go this route, I highly recommend the dill from Trader Joes!

    Mix all ingredients, add a dollop of sour cream, stir until well coated. Add more if needed.

    Add salt and pepper to taste.

    (I told you it was simple!)
     
    This salad is the perfect side dish for a light summer meal, something simple to bring to a party, or great all by itself for lunch. One cucumber and a handful of tomatoes were enough for Doug and I to have a heaping bowl for lunch.
     
    Also tastes good without the tomatoes!

      It sounds so good. It is similar to a cucumber salad I make, but it doen't have the tomatoes that would change it a lot. I will have to try this one.
