    Easy Bean Toddler Tacos

    I was making these for lunch and Lily started opening the cheese and putting it on the tacos. I got closer to her and she put up her hand in a “stop” like motion and said

    “No mom. Don’t tell Lily no. Lily can do the cheese.”

    *gasp* Do I really do that? I guess I never realized how much I try to do everything myself, and that she’s at a perfect age to be helping me. I’ve been letting her help with easier tasks and thought that was okay. But clearly, putting cheese on a taco is something she’s capable of and I need to challenge her a bit.

    She did a REALLY good job! And it was nice having help…

    Bean tacos are something we’ve been making a lot of lately because they’re:

    1. cheap (less than a $1 a can for refried beans, even cheaper if you use dry)
    2. easy (5 min? yeah, that's as easy as it gets)
    3. easily customizable to what you have in the house
    4. healthy (beans, veggies, and cheese? yes, please.)
    5. YUMMY!

    If you’re looking for a quick, easy, and HEALTHY lunch, you really can’t go wrong with these. They’re customizable enough to where you could have this twice a week and still not get sick of them.

    If you do get sick of them, just spread the mixture on top of a salad for yourself or serve with pita chips or dipping veggies.

    EASY BEAN TACOS

    Basic Recipe:
    -mix together a can of refried beans, 3 cloves of garlic, salt, and diced tomatoes
    -spread on a tortilla (.35 for a pack of 10 corn ones, you don’t get cheaper than that…)
    -top with any cheese, or leave it off, and put in toaster oven

    -after removing, add extra veggies like lettuce, green onion, onions, black beans, corn, avocado, etc.
    -if you have tuna, chicken, or any meat leftover and on hand, go ahead and add that in too!

    Serve with plain yogurt for dipping. It tastes like sour cream and if your kids are like mine, they LOVE to dip stuff! Plus it’s good for them…

      I just made these TWICE this week! I subbed in a can of diced tomatos with green chiles instead of plain tomatos. My family, toddlers included, love spicy food. 🙂 Thank you for the recipe!
